In 1948, Takshi Osaki's grandfather began his training as a sushi chef and shortly after opened a sushi restaurant in Osaka, Japan. This restaurant is still a favorite of sushi fans in Osaka. Takeshi continued the family tradition by learning the fine art of sushi from his grandfather. After many years of training as a master chef, he was invited to work as a sushi chef at Nobu Matsuhisa of Aspen. Four years later, he opened Osaki, Japanese restaurant in Vail.
